Book hereAt the helm of Gofio are Safe Cruz and Aída González, both originally from Tenerife and now Madrileños by adoption. They opened Gofio in Madrid ten years ago with a clear mission: to showcase Canary Islands cuisine through the lens of fine dining. One Michelin star later, that same vision remains at the heart of the restaurant.
Located on Calle Caballero de Gracia, just steps from Gran Vía, the experience begins the moment guests walk through the door. The open production kitchen welcomes diners immediately, with pots simmering over the heat and preparations underway. This is where the welcome begins and where the first words of a conversation are exchanged—a conversation that continues downstairs.
At the bottom of the stairs, guests discover an intimate and warm dining room with minimalist interiors in earthy and black tones. The round tables evoke the volcanic landscape of La Geria in Lanzarote, creating a setting that connects the space with the islands’ natural identity.
The culinary experience is designed to make the choice simple: two tasting menu options, one shorter and one longer. From the moment the menu is read, the anticipation of the creativity behind Gofio’s cuisine begins to build—a Canary Islands-inspired approach that captivates the senses.
Here, guests experience a succession of small creations where island traditions are reinterpreted while preserving their essence: the bocadillo de vendimia, with fish that changes according to the season; the “everything chicken” croquette, a tribute to the iconic sandwiches found in Canary Islands village bars; and the salpicón, transporting diners straight to the Atlantic coast.
In the background, playlists personally curated by Safe and Aída complete the experience: music perfectly in tune with the pleasure of every bite.
