Located at Velázquez 24, in the heart of Madrid’s Salamanca district, the Catalan chef—holder of two Michelin stars at Atelier, located on the floor below—chose to cook from memory: the aroma of freshly baked bread from his grandparents’ bakery, the sea, the vegetable garden, well-prepared home cooking, and sauces carefully crafted with patience.

The 600-square-meter, double-height space was designed by interior designer Alejandra Pombo, creating a warm and thoughtfully designed setting that invites guests to stay. Several interconnected dining rooms, a cocktail bar, and a private area offer different ways to enjoy the experience, including more intimate moments.

As its name suggests, the culinary concept seeks to return to tradition and its origins while adding an element of surprise. It is a place designed for slow enjoyment, where celebrating life does not require a special occasion. The kitchen remains open every day of the week from midday until late at night. Its philosophy is refreshingly honest: the finest seasonal ingredients, treated with the respect they deserve. Small producers, exceptional Spanish produce, and the clear belief that when ingredients are chosen at their perfect moment, cooking is above all about knowing how to accompany them.

The wine cellar, with an international presence but a strong focus on Spain, creates the perfect balance between great classics and lesser-known producers who deserve recognition.

The essential dishes that remain on the menu transport diners to the heart of traditional Spanish cuisine: Iberian ham croquettes, which Freixa understands as a familiar flavor elevated to another level; the seafood Russian salad with scampi, transforming a beloved classic into something memorable; and sea bass Wellington with champagne sauce, surprising guests without unnecessary embellishment.

The “Ramón’s Favorites” section invites diners to discover the chef’s personal selections. And for those looking for an experience that goes beyond the dining room, this journey of flavors can be complemented by the Chef’s Table, set in front of the open kitchen and available from Tuesday to Saturday at lunchtime. A menu constantly evolving according to the day’s finest ingredients.
