They opened Restobar 1966 in Valdebebas, named after the founding year of the original restaurant and built on the same philosophy: Galician cooking rooted in good ingredients, family recipes, and the kind of warm service that makes customers feel at home. The menu holds onto the pillars of Galician cuisine, with seafood and land-based dishes both taking center stage: shellfish, fish of the day, meats, and stews prepared with the slow pace that this kind of cooking demands. A project that, rather than reinventing itself, preserves what already worked.
