La Savina

Jorge Baeza grew up in the kitchens of Arrocería Balear in Pozuelo, the family project that at its peak ran seven restaurants across Madrid. When he decided to strike out on his own, he chose Valdebebas and specialized in what he knows best: rice. La Savina is a Balearic-inspired rice restaurant working with Mediterranean ingredients through refined technique and a respect for the product that shows in the result. Among the must-orders is the tortilla de patata, winner of the award for best in the Comunidad de Madrid in 2024, and the ensaladilla, which also won "Best Ensaladilla in the Comunidad de Madrid" in 2025. Its recipe, roasted potato and mayonnaise emulsified with pickling liquid, sums up its approach to cooking well: apparent simplicity, hidden work underneath. A solid choice for a relaxed, unhurried meal and a proper sobremesa.
